Spicy Chicken Pasta

As I have already mentioned in the article from yesterday regarding the raw vegan diet, I have sincerely become adept of a balanced diet that also includes animal protein a couple of times a week.
I had been trying all sorts of diets throughout my life as I consider myself open to new ideas in terms of how healthy I can get, and I have repeatedly got to the same conclusion – my organism doesn’t function at its best without animal protein such as chicken, dairy, and even lean beef once in a while.
However, I have to admit I try to keep – both my mind and body – as healthy as possible not just by eating the right foods, but also exercising regularly.
By the way, did you know that people who consume three or more servings of whole grains each day have a significantly decreased risk of developing conditions that predispose them to diabetes, cardiovascular disease, obesity and cancer reported Dr. Joanne Slavin of the University of Minnesota in 2004 (if you’re interested, you can find more about her work here).
With this idea in mind, I would like to share with you one of my favorite meals before the workout, namely Spicy Chicken Pasta that takes only 15 minutes to be done.
Ingredients for 4 portions
- 1 package of whole wheat penne
- 1 tablespoon extra virgin olive oil
- 2 skinless chicken breasts, cut into small cubes
- 4 tablespoons tomato paste
- 3 cloves of garlic, peeled and minced
- 1 onion, peeled and finely chopped
- 3 slices of gouda cheese, chopped
- ginger, peeled and finely chopped
- a large handful of fresh parsley, roughly chopped
- ½ teaspoon crushed red pepper flakes
- salt and pepper to taste
Method
First put a saucepan of salted water onto heat for the pasta. Add the pasta into the boiling water and let it cook according to the package instructions.
Meanwhile, put 1 tablespoon of extra olive oil in a second saucepan and fry the garlic, onion and the skinless chicken cubes for a couple of minutes until the chicken gets golden.
Reduce the heat to a lower level and add in the tomato sauce, red pepper flakes, the finely chopped ginger and let them simmer gently for a couple more minutes. Season the sauce carefully with salt and pepper.
After the pasta is cooked, drain it and serve it on the plate. Pour on the sauce, sprinkle with the cheese, the chopped parsley and serve it immediately.
